Instructions
- Prepare dates: Soak pitted dates in warm water for 5 minutes to soften slightly, then drain and finely chop.
- Mix dry ingredients: In a bowl, combine Maiva Strawberry protein powder and rolled oats. Mix well.
- Add wet ingredients: Add almond butter and chopped dates to the dry mixture. Stir until all ingredients are well combined and the mixture holds together.
- Form balls: Using your hands, roll the mixture into 1-inch balls. If the mixture is too sticky, refrigerate for 10 minutes before rolling.
- Coat (optional): Roll the balls in shredded coconut for extra flavor and texture, if desired.
- Chill: Place energy balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes until firm.
- Store and serve: Keep in an airtight container in the refrigerator for up to 1 week, or freeze for longer storage.
